Homemade Breakfast Muesli

Ingredients:

3 cups mixed nuts and seeds of your choice (i.e. sunflower seeds, cashews, almonds, pecans)
8 cups rolled oats
2 tsp cinnamon
2 cups coconut
2 cups bran
1 cup honey
1 cup grape seed oil
2 tsp vanilla extract
2 cups mixed chopped dried fruit of your choice (i.e. cranberry, apricot, pineapple)

Instructions:

Preheat oven to 325ºF.

In a large mixing bowl, combine nuts and seeds, oats, bran, coconut and cinnamon and mix well.

Heat honey in a small saucepan, until very runny. Add oil and vanilla. Pour into the dry ingredient mixture and combine well.

Spread the mixture into 2 large roasting dishes and bake in the oven for about 45 minutes. Stir occasionally. The mixture should be golden brown and crisp. Allow mixture to cool, then add dried fruit and combine.

Store in airtight containers and enjoy for breakfast.

Busy-Morning Burritos

What You Need:

2 T of butter
12 large eggs
1/4 C of milk
1/2 t of salt
1/2 t of pepper
1 C of Cheddar cheese, shredded
1 C cooked ham, chopped
6 ( 6 inch) flour tortillas

How to Make It:

Preheat the oven to 400 degrees.
Place the butter into a 15X10 inch jelly roll pan and place in the oven until the butter has completely melted.
Place the eggs, milk, salt and pepper into a bowl and whisk until well combined.
Pour the egg mixture into the pan with the melted butter.
Sprinkle the cheese over the top of the egg mixture.
Layer the ham over the top of the cheese.
Wrap the tortilla shells in foil.
Place the eggs and tortilla into the preheated oven.
Bake 8 minutes or until the eggs are set and the tortillas are warm.
Cut the egg mixture into six squares and place one square onto each tortilla.
Roll the tortillas closed over the egg mixture.

Makes 6 servings

These make a great grab and run breakfast. Filled with ham and cheese they are a quick but healthy on the go breakfast. Sprinkle chopped onion, green pepper or mushrooms over the top of the meat if you like.

Total Time: approximately 18 minutes

Baked Oatmeal

Ingredients:

1 ½ cups oatmeal
¼ cup almonds, slivered
2 tbsp maple sugar
2 tbsp maple syrup
1 dash salt
3 cups milk
Dash of ground cinnamon

Instructions:

Preheat oven to 350ºF.

Grease an 8” square baking dish and add oatmeal, almonds, maple sugar, maple syrup and salt. Add milk and mix well. Cook in a preheated oven for about 40 minutes or until milk has been absorbed and the oatmeal is soft. Sprinkle with cinnamon and serve immediately.  (Serves 4 – 6)

Rise and Shine Breakfast Tacos

What You Need:

1 T sugar
1/4 t of cinnamon
4 (8 inch) flour tortillas
1 T of butter, melted
2 C of vanilla yogurt
2 bananas, peeled and sliced
1 pint strawberries, halved

How to Make It:

Preset the oven to 350 degrees.
Wad four sheets of foil into 4 inch balls and place on an ungreased baking sheet.
Combine the sugar and cinnamon together in a shallow bowl.
Brush the 4 tortillas on one side with the melted butter and sprinkle evenly with the cinnamon sugar mixture.
Form the tortillas butter side down on the foil and press to resemble taco shells.
Bake the tortillas for 5 minutes or until just beginning to crisp.
Fill each tortilla with 1/2 C of the yogurt.
Layer the bananas and strawberries over the top of the yogurt.

Makes 4 servings

These breakfast tacos will have the kids coming back for more.  Use your favorite fruits and a flavored yogurt if you prefer.

Berry Yogurt Breakfast Cup

What You Need:

1 1/2 C fresh raspberries
1 1/2 C fresh blueberries
1 (6 oz.) carton vanilla yogurt
1 t sugar
1/4 t cinnamon

How to Make It:

Divide the berries between four serving bowls.
Mix the yogurt, sugar and cinnamon together until well blended.
Top the berries with the yogurt mixture.

Makes 4 servings

This is a quick healthy breakfast for the family on the run.  Any type of fresh fruit works great in this recipe including pineapple, bananas or strawberries.

Sausage Breakfast Patties

1 lb. ground turkey
3/4 t of salt
1/2 t of rubbed sage
1/2 t dried thyme
1/2 t ground nutmeg
1/8 t cayenne pepper
2 t canola oil

Break the turkey up into a large mixing bowl.
Sprinkle the salt, sage, thyme, nutmeg and pepper over the turkey.
Mix the turkey and spices together until well blended.
Form the turkey mixture into 4 patties.
Place the oil in a skillet over medium heat.
When the oil is hot but not smoking add the sausage patties.
Cook 5 minutes then turn.
Continue cooking 5 minutes or until the juices run clear and the patties are browned.
Drain on paper towel before serving.

Makes 4 servings

The cayenne pepper gives these sausage patties a little zest.  If your not partial to spicy sausage use plain black pepper instead and increase the amount of 1/4 t.

Baked Pancakes

1 large plum, sliced thin
3 T of brown sugar, divided
1/8 t cinnamon
1 T lemon juice
1/2 C of milk
2 large eggs
1/3 C of flour
2 T butter

Preset the oven to 425 degrees and allow the oven to preheat.
Place the plum slices into a large mixing bowl.
Sprinkle the plums with 1 T of brown sugar, the cinnamon and lemon juice and toss to coat well.
Place the remaining brown sugar, milk, eggs and flour into a separate bowl.
Whisk until all the ingredients are blended together well.
Place the butter into an ovenproof skillet and place the skillet in the oven.
When the butter has melted, remove the skillet from the oven and spread the batter evenly into the skillet.
Top the batter evenly with the plum mixture.
Bake 15 minutes or until golden brown and puffed.

Makes 4 servings

This quick and easy pancake can be made with peaches instead of plums if you prefer. Sprinkle the pancake with a little powered sugar just before serving.

Dutch Oven Breakfast

1-pound sausage or bacon
2 pounds frozen shredded or southern style potatoes
1 dozen eggs
2 cups shredded cheddar cheese

Cut sausage or bacon into small one-inch pieces and then cook the sausage or bacon in your Dutch oven. Add the potatoes and then replace lid. Cook until done, while occasionally stirring. You will then mix the eggs together in a bowl and then pour mixture atop the potatoes. Replace lid and then cook this until done. After cooking the eggs, sprinkle on cheese, put the lid on again, and bake to melt cheese. You can serve as is or you may wrap in warmed flour tortillas to make breakfast burritos and then add salsa.
