Oven-Baked Zucchini Fries

Enjoy these delicious fries as a side dish with your next BBQ!

¼ cup dry breadcrumbs
1 large egg white
¼ tsp garlic powder
2 medium zucchini, sliced into 3″ sticks
Salt and fresh pepper
Preheat oven to 425° F.

In a small bowl, whisk the egg white and season with salt and pepper. Mix the garlic powder with the breadcrumbs and place on a shallow dish. Dip the zucchini sticks into the egg mixture and then coat with the breadcrumbs. Place the zucchini sticks onto a lightly oiled cookie sheet, spray with a bit more cooking spray and bake in the oven for about 25-30 minutes or until crispy brown. Serves 4.

Baked Apple with Raisins

4 cooking apples, washed
2 tbsp soft brown sugar
1 tbsp pecan nuts, chopped
¼ cup raisins
Dash of cinnamon and nutmeg
Honey (optional)

Preheat oven to 350°F.

Core the apples, but make sure that you don’t cut all the way through. Score the apples at the center with the tip of a sharp knife.

Mix together the sugar, spices, pecan nuts and raisins. Stuff the apples with the mixture and drizzle with a bit of honey. Place the apples in an oven-proof dish, with a bit of water around them. Bake in the oven for about 20-30 minutes or until the apples are soft.

Serve immediately with a scoop of vanilla ice-cream. Serves 4.

Breakfast Casserole

1 package of sausage
2 cups of shredded cheddar cheese
9 eggs, beaten
2 cans of refrigerated crescent rolls

Preheat the oven to 350 degrees. Crumble and brown the entire package of sausage and pour off any fat. Coat a 9” x 13” baking dish with a non-stick spray and line it with one package of the crescent rolls. Put the cooked sausage on top of the rolls and top with the cheese. Pour in the eggs and top with the second package of crescent rolls. Bake 35 minutes or until the top is golden brown. Serve warm with a buttery maple syrup.

Potluck Mexican Bean Salad

When invited to a pot-luck meal, be sure to ask your hostess what type of dish is needed. Beef and Salsa Casserole

1 pound of ground chuck
1 cup of frozen corn, thawed and drained
2 cups of tortilla chips
2 cups of shredded Monterey Jack cheese
12 ounce jar of chunky Salsa
3/4 cup of mayonnaise or Miracle Whip
1 and 1/2 Tablespoons of chili powder

Preheat the oven to 350 degrees. In a large skillet, brown the beef and drain off the fat. Stir in the salsa. Add the mayonnaise and the corn and stir to blend. In a 2 quart casserole dish, make 2 layers of meat, chips and cheese. Cover with aluminum foil and bake at 350 degrees for 20 minutes. Serve immediately with chopped tomatoes and shredded lettuce.

Grapefruit and Raspberry Fruit Salad

1 yellow grapefruit, peeled and sliced into rounds.
About 12 oz raspberries, washed
2 tbsp lemon juice
½ cup honey
1 tsp fresh ginger, grated
Handful of chopped walnuts

In a small bowl, combine the lemon juice, honey and ginger. Set aside.

Arrange the grapefruit slices on four plates. Top with the raspberries and drizzle with the lemon juice/honey mixture. Sprinkle with chopped walnuts and enjoy immediately! Serves 4
